European Expansion & Roll-out Lead
Launched in Paris in 2019, Tigermilk is a fast-growing restaurant group with 12 locations across Europe — 10 in France, 1 in Belgium, and our newest opening in London (Tottenham Court Road).
We bring Latin American–inspired cuisine and cocktails to life in vibrant, centrally located restaurants — 100% homemade, responsibly sourced, and driven by strong brand identity and guest experience.
Tigermilk is accelerating its European and UK expansion and is looking for a European Expansion & Roll-out Lead to drive new openings end-to-end, reporting directly to the founders.
You will own the roll-out execution from validated site to opening readiness, ensuring projects are delivered on time, on budget and to Tigermilk’s brand standards, while building scalable roll-out processes for multi-country growth.
What you’ll do
Lead the European opening roadmap with the founders (pipeline planning, sequencing, opening calendar).
Manage the end-to-end roll-out for each project: timeline, milestones, dependencies, budget tracking and risk management.
Coordinate key stakeholders across countries: landlords / brokers, architects, designers, contractors, equipment suppliers, and internal teams (procurement, finance, HR, marketing).
Drive key decisions and arbitrations (scope, costs, timelines) to protect quality and brand consistency.
Ensure the concept is delivered flawlessly: layout, guest journey, look & feel, equipment standards and opening readiness.
Oversee handover and snagging management: track punch lists, ensure corrections are delivered, and close remaining items post-handover.
Build and improve the roll-out playbook (processes, templates, checklists, standard tools) to scale expansion efficiently.

Who you are
5–9 years experience in multi-site expansion / roll-out / project delivery (hospitality, retail or scalable consumer concepts).
Proven ability to manage complex, cross-functional projects in fast-paced environments.
Strong understanding of construction / fit-out phases and stakeholder management.
Structured, hands-on, and able to deliver with high standards.
Comfortable operating across countries and traveling frequently.
Fluent English (French is a strong plus; additional European language welcome).
